Ingredients
- 4 salmon fillets, skin-on
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 lemon, zest and juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
Instructions
Pat the salmon fillets dry with paper towels, then season both sides with salt and black pepper.
In a large skillet over medium-high heat, add olive oil. Once the oil is hot, place the salmon fillets skin-side down in the skillet.
Cook for about 4-5 minutes, until the skin is crispy and golden brown. Carefully flip the fillets and cook for an additional 3-4 minutes, until the salmon is cooked through.
Remove the salmon fillets from the skillet and let them rest on a plate.
In the same skillet, reduce the heat to medium and add butter. Allow it to melt and become foamy.
Stir in the minced garlic, cooking for about 1 minute until fragrant.
Add the lemon zest, lemon juice, chopped parsley, and dill to the skillet, stirring to combine and allowing the flavors to meld for 2 minutes.
Return the salmon fillets to the skillet, spooning the lemon herb butter over them. Heat through for 1-2 minutes.
Serve the salmon fillets with a generous spoon of lemon herb butter and garnish with additional parsley if desired.
