Ingredients
- 6 large egg yolks
- 3/4 cup granulated sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- 1 cup strong brewed coffee, cooled
- 1/4 cup coffee liqueur
- 24 ladyfinger cookies
- 2 tablespoons unsweetened cocoa powder
- Dark chocolate shavings (optional)
Instructions
In a medium saucepan, whisk the egg yolks and sugar together until well combined.
Add the milk and cook over medium heat, stirring constantly, until the mixture boils and thickens. Let it cool slightly.
Cover and chill the yolk mixture in the refrigerator for about 30 minutes until cold.
In a medium bowl, beat the heavy cream with the vanilla extract until stiff peaks form.
Fold the mascarpone cheese into the chilled yolk mixture until smooth.
Gently fold the whipped cream into the mascarpone mixture until just combined, ensuring not to deflate the cream.
Combine the coffee and coffee liqueur in a shallow bowl. Quickly dip each ladyfinger in the mixture; do not soak them.
Arrange a layer of dipped ladyfingers in the bottom of a 9x13 inch dish.
Spread half of the mascarpone mixture over the ladyfingers and smooth the top.
Add another layer of dipped ladyfingers and spread the remaining mascarpone mixture evenly over the top.
Cover and refrigerate the tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld.
Before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings, if using.
